Recipe Swap

I'm back!!!! Last weekend we went to the Carolina Mountains with a group of friends for some R&R and Whitewater rafting No kids for 5 days! My kids did not miss out on anything though!Their grandparents took them to Disney's Ft Wilderness for 5 days then to Sarasota for another 5 days. Poor neglected kids!!!

I haven't gotten to much done in terms of cards lately. I have colored a few images and I have been practicing with the distress inks.  I was in panic mode when I got back from vacation and I needed to get my recipe card swap cards done. So I worked on those the last couple nights. So don't peek if you want  it to be  a surprise!





I used Copic markers to color her.

The recipe is for Fruit Salsa. I LOVE fruit salsa, its so yummy and easy to make and take to a summer bbq.  If you have never had it you should try it! Here is the recipe:

Fruit Salsa w/Cinnamon Chips

1 red delicious apple, peeled, cored and diced
1 pt fresh strawberries, chopped
1 kiwi- peeled and diced
1 banana - peeled and diced
1 TB fresh lemon or lime juice
3 TB white sugar
1/2 ts. Cinnamon (you can add less if desired)
1/2 ts. nutmeg (you can add less if desired. I sometimes use 1/4 ts)

1 package of 10 inch flour tortillas
3 TB white sugar
1 TB ground cinnamon

In a medium bowl, mix together the apple, strawberries, kiwi, bananas, lime juice, sugar, cinnamon and sugar. Cover and chill.

Slice flour tortillas into triangles. Lay the tortillas in a single layer on a cookie sheet. Spray tops with cooking spray, sprinkle with cinnamon/sugar mixture. Bake at 375 degress for about 9 mins. or until golden brown.

Serve the cinnamon chips with the chilled fruit salsa!
